Parami Pizza - New Branch

Parami Pizza has recently branched out with a new opening on Shwe Gone Daing Road. Not content with simply cloning the hugely popular Parami Road branch (which would have been no bad thing), new Chef de Cuisine, Francesco Costa has drawn upon his 27 years of experience working in some of the best Italian kitchens around the world, to create a new menu with an emphasis on small, Cicchetti style, sharing plates. We recommend the Italian classic of eggplant parmigiana ($7) – bread crumb and Parmesan encrusted slices of baked eggplant are layered with gooey mozzarella and homemade tomato sauce – it was comfort on a plate. The Barolo braised beef cheek with cauliflower puree ($10) was deliciously rich and tender, while the Paccheri pasta with chick pea puree, pancetta and squid showed off Costa’s mastery of creating small plates of food that punch way above their weight in flavour.

If however, you’re not the sharing type, Parami Pizza has got you covered, with a selection of larger plates. An absolute must-have is the roasted pumpkin, goat cheese and sage risotto ($11) – technically flawless, and the flavour combinations were exquisite. The Lamb shank with mashed potato, glazed carrots and rosemary sauce ($19) was also a triumph – slow cooked for 24 hours, the lamb melts in the mouth and those carrots…too good to share. Of course, you want to know about the pizzas. Thankfully not much has changed on that front – expect authentic fire-baked pizzas, with the addition of two calzone’s ($13 each) – which are talk-among-yourselves-while-I-finish-this huge.

Completely done in, of course we ordered dessert. Go for the Tiramisu ($7) it’s a super creamy sensation, that took the top spot ahead of the yummy pastry and blueberry Scomposto ($5).
